Supermarkets in Britain routinely underpay farmers and exploit their staff to turn a huge profit. Yet they also produce mountains of waste of perfectly edible food every day. Are the giant firms past their sell-by-date?
"One of the great ironies of supermarkets is they are built on a very narrow definition of efficiency", explains author Andrew Simms. Indeed supermarket giants claim customers and food producers are to blame for waste, but that's far from the truth. Importing cheap food at a cost to the environment, the developing world provides produce for our shops to sell at low margins. As well as food thrown out at the end of the day, shorter sell-by dates and an increased 'buy-one-get-one-free' model generates mountains of waste.
