"What is happening in Spain is really a revolution", states one food journalist. It's been happening in Spanish restaurants for over a decade and now, these trends are spreading worldwide. But traditional Spanish cooking isn't about to go out of favour. "For me, cheese will always be cheese and the aroma of vegetables is just an aroma", states chef Lucio.
