The world of lab-grown meat has grown from science fiction to disruptive game changer thanks to the work of private companies. One of the earliest proponents of lab-raised meat was cardiologist Uma Valenti, who researched the use of stem cells in the regrowth of human heart muscles. "That led me to start thinking can you just grow food from cells”, says Valenti, whose startup Memphis Meats debuted a ground beef alternative in 2016. "People like eating meat", says Josh Tetrick, CEO of vegan-focused food company Just Inc. "If we can figure out a way to allow them to eat all the meat they want...without all the issues, that’s the most pragmatic way to fix the problem".
